mediterranean stew

left over leg of lamb chopped
can of garbanzo beans
1 onion chopped
1 cup orzo
2 cans diced tomatoes
1 can tomato sauce
1 can beef or chicken broth
1/2 cup burgandy wine

throw all in a crockpot (except orzo) add salt, pepper, cayenne, and garlic to taste

cook on low for a few hours...1 hour before serving add orzo and turn up heat.

This turned out very well...a tuscan comfort food...lamb made the flavor!!

What do you mean.......left over leg of lamb? There never is any!

OK, once in awhile there is.....if there are just two. I'll give this a try. Only 1/2 cup wine, good, more for the cook! :lol:

Susan, Brian doesnt eat lamb so when I make it, there are always leftovers!
