Anyway, thought I'd share the recipe. I thought the combo of ingredients sounded terrible, but I swear the taste will SURPRISE you! Coconut Chicken w/Fruit Dip! 1 2/3 C Marzetti Slaw Dressing (found near mayonaise usually) 2/3 C Apricot preserves 1/3 C chopped pecans (not minced, tastes good when you can taste them. in fact, i usually add a heaping 1/3C) 1/3 C chopped cucumber (remove seeds in middle and dry with paper towel) 1 C bread crumbs (plain) 1 C flaked coconut 1lb chicken breasts Oven 375 For the sauce: Mix 2/3 C of Marzetti Dressing, apricot preserves, pecans, and cucumbers. Set in refrigerator until ready to serve. Mix bread crumbs & coconut together. (I have a lot of leftovers b/c it's a lot). Cut chicken breasts into bite size pieces. Dip chicken completely in remaining 1C of Marzetti Dressing then roll each piece in bread crumb mixture. Place on cookie sheet and bake for 20 min. Serve chicken with sauce on the side. |

I don't think many people would try it b/c of the ingredients, so I just ask my guests to come over and don't tell them what I'm making.

I LOVE coconut breaded chicken... like shrimp, only no shells so you get to eat it all! The apricto is such a nice blender for the cocnut taste... Good recipe Jo. I'm gonna try this one, when the weather gets cool enough to turn the oven on again. |

lol, you could always do without the dipping. I think my in-laws didn't use their dip (not sure, but they had a lot left on their plate), but LOVED the chicken. We devour ours! |
