10-12 small red potatos (quartered) 4 vidalia onions (chopped into chunks) 1 pack Lipton Onion Soup Mix Olive Oil 4 tbsp olive oil- then mix in the Onion Soup Mix - stir to make a mixture I used a 9 x 12 baking dish- put a nice thin layer of olive oil on the bottom, then placed the potatoes and onions in the dish, drizzeled the oliveoil/soup mix mixture over the top, "tossed well" to ensure the potatoes and onions were covered good with the liquid mix and then back at 425 for about 45 minutes. About 1/2 way thru, mixed it all well. OMG- delicious!!!! There was a small amount left over and we took it with us for the weekend- I heated the left over potato mixture with some Turkey Keilbasa and it made for a delicious lunch!!!! |
