This makes a lot! 3-4 lbs of chicken (white, dark, legs, breasts-doesn't matter- your choice) 2 cans cream of chicken soup 2-3 c cooked rice 1 c sour cream 1 sleeve ritz crackers, crushed 1 1/2 sticks butter, melted 2 tsp poppy seeds Boil chicken (now is a good time to season). When cool cut into bite size pieces. Cook rice(I season this step too. But be careful that you don't get too much when you add it all together). Mix chicken, rice, sour cream, and soup and place in baking dish. Top with crushed ritz crackers. Pour melted butter on top. Sprinkle on poppy seeds. Bake at 325 for 30-40 minutes. This is not a dish for those on a diet but it tastes wonderful. Serve with yellow squash and some fresh green beans-yum!! You really can't tell I'm southern, can you? |

This is one of my favorite dishes my Grandmother cooks(this is the one still in Georgia. The one I live near now is from New York and most of her recipes are italian and german. I forgot to add that the cream of chicken soup can be substituted-my grandmother likes to use cream of mushroom. I don't like mushrooms and I like the extra chickenyness of cream of chicken. |
