One 6.9 oz package Rice-a-Roni chicken flavor One 6 oz jar marinated artichoke hearts 1/2 cup mayonnaise 1/2 green bell pepper, chopped 3-4 green onions, chopped, white & green parts 12-14 pimiento-stuffed green olives, sliced 1 teaspoon curry powder Salt & Pepper 1 pound small or medium shrimp, peeled & Deveined 1. In a skillet, sprayed with vegetable oil cooking spray, brown the rice-a-roni (do not add the butter or oil that the package suggests) Add the water the package requires and the seasoning packet and prepare according to package directions. 2. Drain the artichoke hearts and reserve the marinade. In a small bowl, whisk the marinade and the mayonnaise to combine. Add the green pepper, green onions, olives, curry powder, salt & pepper to taste, and mix together. Add this mixture to the rice. 3. Gently stir in the cooked shrimp. If serving as a salad, chill. If serving as a casserole, place in a 2 1/2 quart casserole dish and bake in a 350 F oven for 20 minutes until heated through. |

I've done this recipe with pork cooked in a honey mustard and then sliced thin instead of the shrimp.....I don't think I used saffron either. Anyway, it is always a great hit. So glad to see a variation. |

Mr. J and I enjoy ordering greek style/type of pizza (some variation of olive oil, pesto, or ranch as sauce ...then tomatoes spinach, feta,mushrooms on top (again, some variation of those toppings)
That's always what we get. A lot of times, we just look for the key ingredients... and we just didn't notice that one of them had to be artichokes when we ordered it. now, it's a key ingredient "I" look for. Most of the restaurants we go to have it on their pizzas. It's SOOOOOOOOOOO good. |
