well, my Mom can't cook (shhhh don't tell her. She tried though!) so my favorite meals are all from my grandmothers (and my uncle who has some secret recipes for grilling-everyone should have some of his food-YUM!):
1-Spaghetti with meatballs and italian sausage 2-Potato Soup 3-Like Karen I loved the whole Fourth of July meal:burgers on the grill, corn on the cob, green beans and watermelen. (of course this could also have to do with the fact that my b-day celebration was combined with it. ) |

My mom is a very very good cook...and my parents had a lot of dinner parties....we ate what they ate....no special "kiddie" dinners for us...dont get me wrong...I love pizza, spaghetti etc...but those are really the foods that were special to us and that we would ask her to make....I mean I still love and eat liver.....I steal jars of kimchi from my best friends mother in law to this day....I do like weird stuff....but honestly right now I would kill for an Olga's with the sauce and curly fries........ |

1. Spaghetti and meatballs - Mom made the absolute BEST meatballs in the world. I've tried duplicating her "recipe" but they never quite taste the same. Mom wasn't one for writing down recipes, so when I sat with her with a tablet and asked her for it, she just rattled off what she did. Same thing with her spaghetti sauce "recipe." I've duplicated that pretty well, plus did some tweaking to it to personalize it. Must admit, I take after Mom in that I don't have a recipe written down, a fact my daughter keeps bugging me about!
2. My dad's homemade Sicilian pizza. This was back in the days before the pizza shops and restaurants sold thick crust pizza. Only the hard core Sicilians made this at home. He would go to our local Italian bakery and buy bread dough and make his own crust. With mom's homemade spaghetti sauce on it, it was to DIE for. The only thing he put on it that I didn't like was anchovies - yuk! 3. Fried dough - they used to sell it at our parish's annual carnival, and my mom and I would work behind the oil vat making them. I like it sprinkled with powdered sugar. The carnival used to sprinkle them with regular sugar. Sounds very plain, and it was, but boy! Were they GREAT!! We made them at home, too, with the same bread dough from the Italian bakery. Today I can buy fresh bread dough at Wegman's, so occasionally I indulge myself and make some. My Mom was a great cook, but my favorite meals where:
1. Roast Beef, potatoes, carrots, gravy and corn on the cob 2. Chicken and Dumplins 3. Mom's Apple Pie. I have a story regarding my Mom's Apple Pie. My Mom passed away in August 2001. She was hospitalized two weeks before her passing. She was in the hospital a few days when she received the bad news that her life was coming to an end. She chose to go into Hospice at her home. As soon as she arrived home, she made an Apple Pie and then felt her job was done and retired to the bed, and waited for the end. My Mom's Apple Pie was the one thing that her whole family looked forward to when they came to her house. The Grandchildren always expected that Grandma would have one waiting for them when they visited on Sunday. One of the memories I have of my Mom's last day before she headed off to Heaven, was my Children, Nieces and Nephews sitting in the living room, with my Mom in her bed surrounded by them eating her Apple Pie....... I have been reading it all along. I have been thinking about what foods I liked as a child, and it has brought back so many memories. I find it very interesting what a diverse group we have here. I am so curious about some of the English responses. If you all have a moment, could you please tell us more - like what exactly are these foods? Preparations? I am Pennsylvania Dutch and that is the cooking I grew up with. As an adult that is the food I fall back on when cooking for a group, or when I am totally stressed and don't want to have to think. I guess you all know about PA Dutch foods. My three are: 1 - Chicken Pot Pie (here that doesn't come with any crust anywhere) (this always came with butterbread and crumb cake and NEVER bought noodles) 1 1/2- Chicken Rivvel soup (it's a tie for first) 2 - Pig Stomach (this always came with red beets & red beet eggs 'cause you make them at the same time, butterbread and a pie - usually shoo-fly) 2 1/2 - Schnitz und Knepp (came with butterbread, dried corn, and a schnitz pie or cake) tie for second! 3 - Fried scrapple (fried in bacon grease, hard, with either syrup or applebutter, bacon or fried ham, and also butterbread) Makes me want to 'go home'. I don't know if anyone remember these, but one of my favorites was Hunt's Skilet Dinners, the Hawiaan Delight. It came out before Hamburger Helper. It had rice, pineapple and yummy seasoning.

I suppose New Mexico has it's fair share of strange food though like Chile Rellenos, Stuffed Sopapillas, Calabacitas (yum), Pasole, Tamales. As a kid I didn't like the New Mexican food too much, because it's all hot, but now it's my favorite. My favorites as a kid were Roast Beef Pizza And my mom's fudge (I know it's not a meal, but it still counts) |

Stacey- then I won't tell you that pig stomach really is stuffed pig stomach.
Not much goes to waste. I'm not sure what you read, but scrapple is what happens to what is leftover after butchering. Of course there are also pig knuckles, pigs feet and tripe (HEY! there is another food I don't much care for -who knew?!) One of my major pet peeves is having to throw out food.
