Biscuits - Cheddar or Cream Cheese and Mini Carrot Cupcakes

CHEDDAR BISCUITS

1 cup all purpose flour
1 cup whole wheat flour
1 cup shredded cheddar cheese
2 TBL butter
3/4 cup milk
grated parmesan for topping

Preheat oven to 375.

Put flours and cheese into food processor, pulse to mix. Add butter and milk, mix well. Turn onto floured surface and roll to 1/4 or 1/2 inch thickness. Poke with tines of fork and dust with parmesan. Cut into desired shapes. Place on greased baking sheet, bake for 15-20 minutes or until golden. Store in refrigerator.



EASY CREAM CHEESE BISCUITS

1 package (1/4 oz) dry yeast
1/4 cup warm water
21/3 cups whole wheat flour, plus extra for rollong
1/4 unsweetened applesauce
4 ozs cream cheese
1 egg
1/4 cup dry milk powder, plus extra for rolling
1 teaspoon garlic powder

Preheat oven 350.

In a small bowl dissolve yeast in warm water. Combine with all ingredients
in a food processor and mix into dough( you can do this by hand, I use the dough setting on my bread machine) Roll to 1/4", sprinkle dough with extra flour or dry milk if needed. Cut into shapes with cutters, bake for 20-25 minutes on greased sheet. Store in refrigerator.


MINI CARROT CUPCAKES

These aren't rolled out but look nice with an assortment of cookies.

3/4 cup whole wheat flour
1/4 cup soy flour
1 tea baking soda
1 cup ground carrots, about 18-20 baby carrots
1 egg
1/4 cup cottage cheese
1/4 cup safflower oil
1/3 cup honey
1 tea vanilla

Preheat oven to 325. Line mini muffin pans with paper cups.
Combine dry ingredients in large bowl. In a food processor grind the carrots. Add the egg, cottage cheese, oil, honey, and vanilla, blend together in processor. Add wet ingredients to the dry and stir. Spoon batter into muffin cups, about 3/4 full Bake 15 minutes or until toothpick comes out clean. If desired frost with cream cheese, store in refrigerator.

I never thought to make my own biscuits. Always use the refrigerated kind, but those cheddar ones sound delicious and easy to make.

This section is not helping my diet!! :evil: :evil:
Diets make me unhappy. ;) I rather just always pull out the 'lazy day' jeans when I feel the waist can't handle anymore (I have a closet full of pants in 3 different sizes 8O ).
I LOVE homemade biscuits and bread- nothing like the smell of bread products cooking in your oven! and knowing that you don't have to worry about the preservatives the grocery store doughs contain. Thanks for the recipes...
