Chef Jim Sklaver Mac & Cheese 2 pounds Macaroni pasta Two sticks unsalted butter 1 small white onion,finely chopped 2 cups flour 1/4 teaspoon nutmeg 3 qts to 1 gal whole milk 1/2 qt heavy cream 1/2 cup grated Jarlsburg Swiss cheese 1/2 cup asiago cheese 1/2 cup mild white chedder 1/2 cup smoked mozzarella 1/4 cup crumbled gorgonzola cheese Salt/pepper to taste Preheat oven to 350 degrees In large stockpot set over high heat,cook pasta in salted boiling water until mostly tender,but with a little bite in center (al dente) Drain. Meanwhile in a large saucepan,set over medium-low heat,melt butter,add onion,.Cook 4-6 min. until onion is tender. Add flour and stir to combine. Lower the heat to low, cook another 10 minutes,stir occassionally. Make the bechmel : Add nutmeg and 3 qts of milk and cook over medium low heat 20-25 min. , stir occasionally to break up the roux, until it thickens to the consistancy of a pudding. Add more milk if the mixture is too thick(if spoon can stand straight up in center of pot). Remove from heat. When bechamel is cool, fold in the cheeses, then transfer the cheese mixture to a large stock pot set over medium heat. Add heavy cream and cook cheese until melted, stir occassionally. Add cooked pasta and toss to coat it completelywith the cheese. Season with salt/pepper. The paper said it serves 8 (and a small army, lol) Enjoy! We already had flurries here, that accumulated to 1/2 inch. Nothing like snow to make me think of comfort food! |

Yes, we have wonderful fall weather. Low 40s at night and mid 70s in the day. I don't think I'd like to have as much snow as you guys see, but one really good 15" snow would be nice. It's been years since we've had one like that! I think the dogs would LOVE it!! And it'd be a perfect time to try out this recipe. |

There's a difference between the long prep mac and cheese and the stuff in the pouch. Both are served here, alas, the pouch more often than the long way. Ah, but the good crunch on the top from a good oven bake, the velvet texture on the tongue, the intricate flavors.........oh great, now I'm hungry. |

I just hate to cook. I really love homecooked meals, but I like things slow cooked all day, like stews, soups, roasts done in a slow cooker etc... things that are easy to put together and leave all day. |
