2 lbs. ground beef, 80% lean 1/4 cup Jarlesberg Swiss cheese, diced 6 cremini mushrooms, sliced and sauteed 2 Roma or plum tomatoes, diced 1/3 cup barbecue sauce 2 eggs 1/2 cup bread crumbs 8 slices bacon 1. Line jelly roll pan (with raised edges) with tin foil. Put a rack on top of foil. Coat with non-stick spray (Pam). 2. Put all ingredients except bacon in a large bowl and combine well. Hands work best. 3. Shape mixture into 4 loaves of equal size. 4. Wrap 2 slices of bacon around each loaf. 5. Place loaves on rack. 6. Bake in preheated 350 degree oven for 40-45 minutes. I usually make 6 smaller loaves and use 1 strip of bacon cut in half on each loaf. And the melted cheese that drips onto the tin foil is really good. |

I'm going to the store tonight to get the stuff to make this. It sounds really good! When I make meatloaf, I always get kidded because I start off with 5 lbs. of hamburger and end up with 4-5 meatloaves. Whoever comes over for dinner gets to take home a meatloaf for their freezer so the kidding turns into "thank you" pretty quickly ! Whenever I try a new recipe, I ask my husband how he would rate it from 1 to 10. A 1 means he would rather eat a dirt sandwich next time and 10 means even Truman doesn't get the smallest bite! |

Paula - YES!!! It was delicious! My husband loved it and said, "Keep that recipe!!" One of our friends came over for dinner and she said she really liked it too. They must have, because there was about 1/2 slice left! And, yes, Truman got to sample it too. He scarfed it down and licked the plate clean! Yummy! |
