Turkey Meatloaf Makes 1 Loaf (or 4 mini loaves) 1 package of lean ground turkey (you know what I mean, those plastic containers that usually have about 1+ pounds of meat) 1 egg 3/4 cup (about) ground cornflakes or breadcrumbs or ground saltines 1/4 cup chopped fresh parsley 1 tablespoon dried 'herbs de provence' (or other herb mixture) 3 tablespoons white wine worcester sauce (not the dark stuff) 1/2 cup (about) diced onion 1/2 cup (about) cooked chopped spinach 1/2 cup (about) diced mushrooms 1 cup ketchup or chili sauce salt pepper Preheat oven to 350. Mix everything (but only half the ketchup/chili sauce) together in a big bowl. Do not overmix or it get tough. Put into loaf pan or shape on a pan. Spread the rest of the chili sauce or ketchup on the top of the loaf. Cook until it reaches 160 degrees, about 25-35 minutes. EAT! |

Sounds good, but I just cannot bring myself to use ground poultry of any kind... I'm so picky. LOL |
I have a hard time eating it any other way. I was a strict vegetarian for almost 15 years so when I started eating poultry last year, I found that I could stomach it best when I had it in ways that resembled its soy counterparts. If I crumble up the ground turkey, it tastes a lot and feel like seitan when it's cooked-- especially with lots of seasonings. Meat that looks like meat is still difficult for me! |
