The recipe on this site is similar to the one I have, the site also gives cooking tips and the history of Paella... Quote: Paella with Chicken and Seafood
This is the paella best-known to visitors to Spain. The yellow rice includes bits of chicken, squid, shrimp and mussels. You can savor it at a Costa del Sol beach bar or at almost any restaurant in AndalucĂa. It differs from a traditional Valencia paella, which doesn't include seafood, but is made with snails, rabbit or chicken, and both green beans and fat lima beans. mmmmmmmmmmmmm mmmmmmmmmm
Thanks!!! I've made my grocery list and am headed to the store. IO'm going to give the chicken paella a try. I don't have a paella pan but will improvise. If it turns out even halfway tasty I may invest in one. We are headed for Ithaa today so I should be able to find tha appropriate rice and saffron. |
Great, let me know how you like it!!
Don't forget the spanish guitar music cd ! |
Just got back from the store with "the stuff" but it's too late to cook tonight so I guess it'll have to wait til later in the week
Missing ONE ingredient...............SAFFRON!!!!!!!!!!!!!!!!! It was $17.00 for a bottle that looked like it contained about enough to put in a tooth paste cap. Is it essential????? Is there anything to substitute?????? |
Saffron is quite expensive. About $50 or $70 an ounce.
I've seen it come in 28 one gram packages. Nicely packaged, if not cheap! |
But what is the flavor? Can something else be substituted??? I want to make a dish to eat not wear or invest. |
Tasker's Mom wrote: But what is the flavor? Can something else be substituted??? Who knows? It's too pretty to open the tin!
lolol |
HAHAHAHAHAH
Then someone can just send me their empty jar and I'll display it prominently on my counter, throw in a litlle yellow food coloring and no one will be the wiser. |
Well, I went to our spice cabinet intending to take a picture of the tin to upload, and found the tin open! To my surprise it was not packaged into 1 gram packets, but packaged bulk.
Joan tells me that they are usually packetized, but this was a bulk "sample". (She is in the spice business, you know. Or maybe nobody knew.) Anyway, here is a picture of the tin, and a picture of the spice and the tin: |
Well I am in awe!!!!!!!! No I did not know she was in the spice business!!! I'll print the picture, tape it to my fridge and pretend I can afford Saffron. In the mean time ask her what affordaable spice I can substitute!!!!!
By the way, that looks like enough Saffron there to pay for a cruise to Spain!!!!!!!!!!! We always said you were a pusher, just didn't know it was Saffron nyou were pushing!!!!!!!!!!!! |
That's one ounce.
"A Saffron substitute is Turmeric, (which is a member of ginger family). Be careful when using Turmeric as it has a rather strong flavor and can overwhelm the food. Tumeric is also known as Indian saffron." |
THANK YOU!!! Somewhere in the back of my mind I thought I remembered there was something. I worked with an Indian Dr. for many years and now that you mention it I do remember him saying that!!!! Thank you and I'll tread lightly. Perhaps once I perfect the Turmeric version I'll splurge and get sme real saffron. Wouldn't it be terrible to pay $16 for an pinch of saffron and botch the whole thing!!! |
Around here we can buy it in tiny envelopes, usually displayed hanging at
the checkout at the grocery store. It is harvested locally if I am not mistaken, I think the brand name is Amish or Mennonite. In those envelopes there are just a few threads of saffron. Saffron is actually the dried stigmas of the saffron flower, "Crocus Sativus Linneaus". The tiny envelopes are usually availably here, but I see more of it around Easter. Handy, since that is when I use it! It has a subtle flavor, but if you've never had it, you could substitute and it probably won't matter. Shellie |
Ginny,
If your store has an international section, the spanish food area-Goya (brand name) I believe has it. Now all you need is a Spanish or Portuguese wine! |
Yummmmy! What time is dinner? |
Somebody come cook for me!!! |
Last night was Paella night!! Zahra, I used the recipe from your link (sort of). It was great. I made it with only chicken (no seafood or pork) and it was a hit!! Much easier than I thought it would be. Now I have plans for a vegatarian version |

Great! Glad you enjoyed it! Its fun and fairly easy to make. A vegetarian version sounds wonderful ! Years ago I was involved with a study on the Mediterranean Diet at Brown University. Its heart healthy, didn't feel like a diet!! I didn't stay with it , but I'm running back to it, felt great when I followed it. |
Oddly enough, Cooking Light is featuring Spanish Nights on their website, I didn't read it yet but it refers to tapas.

I just bought saffron for $2.98 at Trader Joe's. Bottle size in 1 gram.
Tumeric is very healthy for you. It is also sold in capsules, but darned if I can remember what it's used for.........cholesterol? For saffron sub I prefer Annato oil. If you have a latino or Filipino market look for annotto seeds. Then heat 2 cups of vegetable oil to about 350, add seeds then turn off the heat. Allow to cool, strain and bottle. Refrigerate. |
