Can't help just yet, but your buns are safe. While plantains in coconut are probably not on Brian's faire, there are meatballs, etc that would be easily consumed by a picky guy. |
alright..this is what i came up with red beans and rice spicy haitian pork chops...has garlic, scallions, scotch bonnet chili (hehehe), onion, bell pepper, lime and cloves... served with ti-malice sauce..tomatoes, onion, hot pepper, brown sugar and malt vinegar creole green beans..bacon, green pepper, brown sugar, dry mustard and green beans... hope they bring the Tumms.... |
Your menu sounds good to me. |
I don't do hot food anymore, but sounds great. (what, no goat??) Scotch bonnets, et al are out of bounds for me. What's for dessert? Go southern US as it would be similar and yet American. Coconut cake, Banana's foster, sweet potato or pumpkin pie (my mother --and of course I--always sub out 3 Tb. of the evap milk for rum. I've tried more and it doesn't set quite right. Amp up the spices as well) Panamanian friend is big on rum with coffee.....go straight for the stuff from Mexico who's name I can't remember though I just had some with her recently.....??? darn it) Kaluha!!! Of course you could always whip up some Haitian cremas.........it least it would keep Brian's stomach under control.......and put me under the table! |
