I've been trying to decide what to bring myself. I'm coming from Michigan, so whatever it is, it needs to be transportable. Karen & I are going to pick up something that day, but it's always fun to bring something to pass.

My mom makes this amazing dessert and I'm making her bring it. (If I;m driving, she can do the baking. ) She calls it, The Next Best Thing to Robert Redford. I will be renaming it, The Next Best Thing to Orlando Bloom!!!
Thankfully we only have to drive about 90 minutes, it would never last otherwise. For you Michigan people, just stop and grab a couple of bags of Middlesworth Chips and some Lebanon Bologna on your way into PA. People will think you're local. |
I have the best salad recipie for picnics:
Brocolli and Cauliflower salad Broc, cauliflower cut into flowerettes green onion chooped, red seedless grapes bacon, fried, crumbled mozz cheese, or mont jack cheese dressing: mayo, parm cheese, touch of vinegar, sugar Mix together and enjoy...obviously adjust for size, this can be as big or small as you want. |
Oh yum, that sounds interesting. Here's another one, bean based as protein is so hard to take to picnics. It's from a website called My House...or something like that.
Barbeque Bean Salad 1 pound dry pinto beans 1 can (15-1/4 ounces) whole kernel corn, drained 1 medium sweet red pepper, chopped 1 medium green pepper, chopped 1 medium onion, chopped 2 cups tortilla chips, coarsely crushed, divided Dressing: 1/4 cup cider vinegar 1/4 cup vegetable oil 1/4 cup ketchup 1/4 cup packed brown sugar 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 2 teaspoons chili powder 3/4 teaspoon ground cumin 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon hot pepper sauce Place beans in a Dutch oven or soup kettle; add water to cover by 2 inches. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and discard liquid. Add water to cover beans by 2 inches. Bring to a boil. Reduce heat; cover and simmer 1 to 1 to 1 1/2 hours or until tender. Rinse, drain and set aside. For dressing, in a saucepan, combine the vinegar, oil, ketchup, brown sugar and mustard, Worcestershire sauce, chili powder, cumin, salt, pepper and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Cool slightly. In a large salad bowl, combine the beans, corn, peppers and onion. Just before serving, stir in dressing and half of the chips. Sprinkle with remaining chips. |

something to pass??? .....from the sheepdog cookbook...... Kitchen Sink Cookies:
1 cup white sugar 1 cup brown sugar 1 cup margarine 1 cup oil 1 egg 1 tsp. vanilla 1 tsp. baking soda 1 tsp cream of tartar 1 cup rice Kirspies 1 cup coconut 1 cup old fashion oatmeal 1 cup walnuts, chopped 1 cup morsels (or more, LOL), your choice flavor and 3 1/2 cups flour sifted Drop by teaspoon and press with fork, bake 325 until golden. |
And if you are coming from distance and want to share:
A simple fruit salad you can make on the spot: remember a can opener abd a big bowl: canned fruits such as: pineapple chunks, drained madarian oranges, drained canned cherries, drained mixed fruits, drained bananas, walnuts, coconut, and anything else that looks good; grapes for example. Plain yogurt and a bit of honey. Mix honey in plain yogurt, pour over fruit salad. Great if some fresh mint is available, but don't sweat it. |

Thought I could....and am so bummed cause I want to meet everyone and their pooches---especially Dudley ( am partial to wannabe OESes) but we'll be an hour away and my wife's thing is from 830-noon then we head further east for that party in Little Egg Harbor.......

weather.com says isolated thunderstorms and 79. I can handle isolated. Belle is not partial to rain, in fact, I can't get her out of the house if it's raining, so they'd better be isolated! I wonder if I even own an umbrella . . . best add a pile of towels to the pile of stuff for the van. J |
Hey, so we made and brought the fruit salad with the coconut, honey, and yogurt. YUM YUM YUM! There was quite the plethora of yummy foods to be shared there. Hope it continues next year. Nobody went hungry, that's for sure! At the NEOESR picnic in CT on the 4th, there will also be a similar spread. sigh Time for a new topic, methinks. ~Chef Katie. |
