chicken breasts eggplant french bread herbed goat cheese or other type of herbed soft cheese cherry tomatoes fresh basil olive oil white wine salt, pepper, garlic powder there are a lot of little steps but it is super easy.... first step make bread crumbs....cube (about 1/4'' cubes)hard roll type of bread and saute in some olive oil till crunchy..set aside and let cool... second step... pound chicken breasts thin...saute with some olive oil in pan...sprinkle with salt, pepper and garlic....remove and cover with foil to keep warm... third step.. peel eggplant and cut 1/4'' thick slices legnthwise..sprinkle with salt and pepper..saute on both sides till brown and done... fourth step... slice cherry tomatoes in half...slice some fresh basil...saute with some olive oil and white wine.... plating.. start with one slice of eggplant, spread some herbed goat cheese or boursin cheeseon top then top that with the chicken breast, then add another eggplant with goat cheese face down, tomato sauce and bread crumbs on top... it is a LOT lighter with great flavor...you can add or subtract items..but i found this to be divine!! |
