Preheat oven to 350 Grease and flour 2, 8 inch pans 2/3 cups butter or margarine 1 1/2 cups (minus 2 Tb.) sugar 3 eggs 1 t. vanilla 1/2 cup cocoa 2 1/2 cups sifted AP flour....all purpose 1 t. baking powder 3/4 t. baking soda 1/4 t. salt 1/4 cups (plus 4 T.) water 2/3 cup sauerkraut rinsed well, squeezed a bit, chopped Throughly cream butter and sugar. Beat in eggs, one at a time. Add vanilla. Sift together dry ingredients. Add dry ingredients alternately with water to egg mixture. Stir in sauerkraut Turn batter into prepared pans and bake about 30 minutes....start testing after 25. |
