Sauerdraut Choc. Cake Recipe

Remember when adding strange ingredients was all the rage in baking? No, well, it was the 50's and 60's. This was my go-to chocolate cake for years. I thought I had lost the recipe until I was going through my mother's and aunt's recipe boxes. Bless my mother for saving this. Still has chocolate splatters on it (probably mine.) The kraut provides the chemical lift to the cake and the vegetable keeps the cake moist. (you don't taste or feel the cabbage) It is for high altitude which would explain some strange measurements. You low landers ignore the stuff in (). You may need to fiddle with the levening as well.

Preheat oven to 350
Grease and flour 2, 8 inch pans

2/3 cups butter or margarine
1 1/2 cups (minus 2 Tb.) sugar
3 eggs
1 t. vanilla
1/2 cup cocoa
2 1/2 cups sifted AP flour....all purpose
1 t. baking powder
3/4 t. baking soda
1/4 t. salt
1/4 cups (plus 4 T.) water
2/3 cup sauerkraut rinsed well, squeezed a bit, chopped

Throughly cream butter and sugar. Beat in eggs, one at a time. Add vanilla. Sift together dry ingredients. Add dry ingredients alternately with water to egg mixture. Stir in sauerkraut

Turn batter into prepared pans and bake about 30 minutes....start testing after 25.
