Corn Salad Recipe (from Sheepiepalooza picnic)
Corn Salad 3 cans sweet corn (drained) 1 green or red pepper chopped 1 bunch green onions (optional) 2/3 c. mayonnaise 1/3 c. sour cream 1 c. (or package) shredded Mexican Cheese 1 bag Chili Cheese Fritos Mix all of the ingredients except the Fritos together and refrigerate overnight Crush/crumble the Fritos to tiny pieces and stir into salad just before serving Helpful hints: - I buy Green Giant Mexican corn that already has red and green peppers in it. It saves me the trouble of chopping up the peppers and tastes just as good. - I HATE onions so I never use them in recipes. So far nobody has complained about this whenever I take it anywhere but I let everyone know that the recipe calls for it when someone asks for the recipe. - I open the Frito bag to let the air out then clip it shut and crush the Fritos right in the bag. You want to crush the Fritos as small as possible without them being powder, to give the salad a little crunch. |

There are lots of lettuce salads, pasta salads, potato salads, broccoli salads, etc. but I haven't had a corn salad yet at any picnic I have attended. A co-worker brought this salad to a work barbecue two summers ago and since I have taken it to picnics for the herding club, therapy dogs and twice for the OES people now. Tomorrow I am making it for my nephews graduation party. Almost every time someone gets excited over it so for all of the above stated reasons it makes it my first choice of a dish to bring. |
