Rub it in, rub it in. Also on a vegan diet until Easter....but plan on a giant nose dive off on Thursday.....for corned beef. Fully understand the serving amounts. Never seem to have left overs for sandwiches though, it is just toooo good. Mustard or horseradish? |

There is just enough left over for dinner tomorrow, if I don't get a hankering for leftovers. However, for Lent I gave up eating after dinner so it should be safe. Horseradish, naturally! |

50 is better than 40 anyday! Joan is HANKERING for corned beef -- so we went out for dinner tonight. We had fish. LOL |
How did you cook it Paula? I'm doing mine on Thursday. I've done it both in the crock pot and in the oven for hours - and once I even cooked it on the stove top in a big skillet - all were good. Still, I'm open for a new or different method of cooking. |
Tammy, I use the crock pot. I cut up about 3 carrots and put those in first. Then the corned beef, one quartered onion, the spices that come with the corned beef, and about a cup of water. I put it on high for an hour, then turned it down to low for about 5 hours. Cabbage went in about half an hour before I wanted to eat, and I turned the crockpot to high again. Obviously I was home at the beginning and end to fiddle with the settings. This was for a 2 pound brisket. Adjust cooking time if you have a larger cut. Leftovers last night were delish. |
That sounds yummy. I've never had it as a roast, just the sliced deli stuff. May have to snoop around the meat section and try to find it. |
Psssst: I think tomorrow I'm going to sneak out and get a nice corned beef and put it in the crock pot and cook it overnight as a surprise for Joan! Thanks for the crock pot recipe!! Hmmm, Thinking about this..... Maybe I ought to wait for the morning of the 17th to start... unless I want to feed it to her for lunch. LOL Will it keep well in the crock pot, or would I just refrigerate it? And how would I re-heat it, just pop it in the microwave? And how did you slice it? With the grain, against the grain, on the bias? I've never cooked a cabbage before -- anything I should know... How to clean it? Or peel it or something? Thanks! |
I'm one day late....but into the crockpot my 1st ever corned beef roast goes! I'm using your recipe Paula - sounds great. We LOVE cabbage, and add it to pork roasts often, so this should be good. |
