* 9 lasagna noodles * 1/2C butter * 1 chopped onion (optional) * 1 clove garlic, minced * 1/2C flour * 1t salt * 2C chicken broth * 1 1/2C milk * 4C shredded mozzarella cheese (i use less than this. i just eyeball the amount i want to put on so that each layer just has a nice amount of cheese) * 1C grated Parmesan cheese, divided * 1t basil * 1t oregano * 1/2t pepper * 2C ricotta * 2C cubed real tiny, cooked chicken meat (which I season or use pre-made/rotisserie chicken) * 10oz frozen chopped spinach, thawed & drained super well * 1T parsley * 1/4C grated Parmesan cheese for topping Oven 350 if using lasagna noodles you need to cook, the best way to cook them is just put them in a pan of ROOM TEMP water and let them sit for 45 min. Take out and put on nonstick foil until ready to use. Works every time. Melt butter in large saucepan over medium heat. Drop in onion and garlic until tender then add in flour and salt, and simmer until bubbly. Note: I'm someone who doesn't add salt to things, but I felt it was needed here. In same saucepan, mix in the broth and milk, and boil, stirring constantly for 1 min. Stir in 2C moz cheese & 1/4C Parmesan. Season w/basil, oregano & pepper. Keep on lowest setting or take off heat (i keep the pan half on the heat just so it doesn't thicken) Mix ricotti w/spinach. Spread 1/3 of the sauce mixture in the bottom of a 9x13 baking dish that you've hopefully sprayed w/pam. Layer 3 of the noodles. Put 1/3 of the ricotta/spinach mixture, and 1/3 of chicken (again i just eyeball amount), and 1/3 of sauce. Do again for next layer. Last layer, I put 1/3 of sauce, chicken (or don't if you don't like too much) and then top w/mozz cheese and parm cheese. sprinkle with parsley. (I always wrap my dishes w/foil so the cheese doesn't look burnt OR add the cheese 15 min or so before it finishes) Bake 40 min or so in the preheated oven. |

Sounds really yummy. I have to get past the idea of cheese and poultry together, I have a problem with that, but am willing to try. Your recipe looks really good and each of your recipes I've tried were really good...so will give it a try! Thank you. |
I'm making this tonight for dinner, but substituting ground turkey for the chicken. No other reason than I have it in the freezer and it needs to be used... Can't wait! |

That's great to hear!! My husband prefers/loves my red sauce lasagna, so this isn't his favorite, BUT he likes it. I LOVE it, and the kids eat it too (they hate normal lasagna and I have no idea why). |
