What are you cooking today?

I'm in the mood to cook--the time change has told me "summer's over!" Today I'm making herbed lentil soup. Haven't made it in years, I remember it being o.k. and it's healthy and low-cal. On the flip side, I'm also making lasagna but cheating using the no-boil method and jarred sauce (but doctored with onions, mushrooms, beef and spices).

Anything on your stove today?

I too am cheating with pre-prepared: taking to church today meatballs in a BBQ sauce; playing with various concoctions to make an interesting sauce since all they had was Italian meatballs and I didn't want to do a red sauce......we have a big tray of left over lasagna to reheat.

Dinner is carne adovada: pork in red chile sauce. If the pork is left in larger pieces it's great for a crock pot, but we cut our's down so it cooks faster. It's marinating in the red chile sauce now.

Lentil soup sounds yummy. Had some earlier in the week. I make it vegetarian, do you use a meat base?

We don't add the clam juice (husband) and we add lots of crumbled fried bacon. Also if you make it you also need 1 red pepper and 1 green pepper...always a favorite at my house and really good with rolls or cornbread!

I just put a turkey carcass on to boil for stock. I've got home made noodles drying for turkey noodle soup.

We really strapped on the feedbag last night at the bonfire. Hot dogs with coney sauce, mac and cheese, cowboy beans, deviled eggs, german slaw, homemade bread and butter pickles, chocolate cake, pumpkin pie, lemon bars, mini muffins ( Jo's recipe) cookies, smores.... cheese ball, chips, spinach dip. I could go on. Ugh.

Carne adovada sounds great! Do you make your red chile sauce or buy it pre-made?

I like to make chile verde, but it's hard to find tomatillos here in Buffalo. :cry:
I love love lasagna, but I've never been a soup person. For some reason, it's always been the last thing I want. We just got back from the in-laws... so we're eating chicken parmesan&spaghetti that I made sat morning before we left ...b/c I knew there's no way I'd want to cook anything when we got back. Jilly gave me a huge headache the last 1.5 of the almost 3hr drive, so thank God I did!!! I just want to RELAX now.

I use chicken stock for the base. Diced tomatoes, a can of tomato paste, a cup of lentils, tablespoon on red wine vinegar, chopped up onions, celery and carrots. I just had a bowl. It's fine, nothing to write home about. But it's filling and healthy.
To answer the chile: both. Doing the dry pods isn't a big deal, just a few extra things to wash. Buying it frozen.......that's tonight since hubby cut up the meat. I'm quite spoiled living here being able to go to the store and buy red or green chiles, frozen red puree, chopped green all in various heats and roasts. The produce section is better about carrying different chiles, but the real treat is a big mexican grocery store not too far. Lots of selection.

Green chile. I usually don't do the tomatillos, not because I don't like them in the verde, just don't bother. New Mexican cooking tends to stay with just the chiles and seasoning.

Alas, I can't take the super hot stuff anymore, now it's flavor then heat. Made some yummy green chile chicken soup the other day with hot green........I have a cold and the chiles are always good to loosen up the sinus'.

As for lunch today, when I got to the kitchen a friend was finishing up a few trays of baklava and accidently burned the butter. So I grabbed several pounds of pasta, cooked it and then poured the burned butter over the pasta and added Romano cheese. It just flew off the potluck table. I'm glad I sneaked a piece as I was prepping it because once the piranas saw it, it was gone!

The Italian BBQ meatballs were also a big hit, never did get a taste.
We had an impromptu potluck last night at Lisa & Alex and Travis's house.
I just brought broccoli and made a cheese sauce...but the whole menu was bean and corn veggie burgers, homemade chicken strips, macaroni salad, lettuce salad, mashed potatoes, homemade pumpkin muffins and pumpkin pie...
I think I rolled home!

It was nice getting together too with the family -

Yesterday I made:

Oatmeal...for three breakfasts this week. It is the steel cut and takes much longer to cook, but totally worth it.

Hummus for a couple lunches this week.

A Buttermilk Pumpkin Poundcake w/ glaze.

Chicken parm for dinner.

I also chopped veggies to have with eggs for breakfast, and the veggies for a Beans/Sausage over rice for dinner tonight. I started the beans to soak, too.

So I guess more prep than cooking. I love spending Sunday's in the fall/winter making/prepping food for the week. :D

No cooking for me this weekend...I was way too busy! I did do some crockpot research though and plan on making some fajita chicken for dinner tomorrow! I can't wait! :excited:
15 bean soup with cajun seasoning and spicy sausage. Last week, basic beef soup with mushrooms, asparagus, and homemade egg noodles, topped with a touch of shredded Italian 4 cheese mix. Of course each begged for a good fresh crusty bread on the side.
oooooo, I so love soup season. Sorry Mrs. J, I'm most content with a big bowl of soup.

Dawn, after that meal, indeed roll home, but bet your slept well.

I need to get some things out of the freezer before Turkey Day approaches. Tonight ground lamb something. I didn't make it to the store today so exactly what will be determined what falls out of the pantry. I don't have cucumbers for tziki sauce, maybe just yogurt mint sauce instead. No dry potato buds so no shephard's pie............ :lmt:
The lasagna rocked on Sunday, was a little dry last night and I don't have high hopes for the lunch leftovers. Soup was totally blah and I will probably throw the rest away.

Soups, I have lots of recipes to try this winter. And I vow to make Julia Child's beef bourginon (I know I spelled that wrong).
Chicken soup, from scratch. I did use a bag of frozen vegetables, and store bought noodles.

I almost made lentil soup: I use an onion/carrot base, with tomatoes and lentils, some herbs and for good measure: some nice sherry or wine.
Yum, but how much more fun making your own noodles......OK, it's messy and you make far too many and they are a bit thick........this is what I get when I skip dinner
