These are so dang yummy ...it's ridiculous. I'm so not a butterscotch fan either but the flavors go so well together. I just kept popping them in my mouth! Then again, I pop everything in my mouth like they were tic tacs. * 1 3/4C flour * 1/2C b.sugar * 1/2C sugar * 1t cinnamon * 1/2t ginger * 1/2t nutmeg * 1t baking soda * 1/4t baking powder * 1/2t salt * 2 eggs * 1/2C melted butter * 1C canned pumpkin * 6 oz butterscotch chips ("about" half a normal package...I probably put 3/4C) oven 350 line mini muffin pan SIFT flour, brown sugar, white sugar, cinnamon, ginger, nutmeg, baking soda, baking powder&salt. Add butterscotch. In another bowl whisk eggs, butter & pumpkin. Mix both together but don't overmix!!! put in muffin tins ...at least 3/4 full so they plump over. bake until toothpick comes out clean. 10 min. give time to cool so they can set. |

I love everything pumpkin so I'm gonna remember this one for when I actually go to the grocery store so I have all the stuff (which I never do and realize partway through mixing). Also, nice picture. Did you ever get the new camera? |

Sooooo, I made a special effort to get all the ingredients to make this today. I don't have mini muffin tins but I figured it would be fine. Unfortunately, it wasn't until 40 minutes later and I couldn't figure out why the darn things were still so soft that I realized it said "1 cup" of pumpkin-- not "1 can." I wish I could read. On the plus side, they're still awesome. Just really gooey. I told James they were called spoon muffins because you had to eat them with a spoon. He believed it and he's happily eating them a spoon. |

Love it. Good save! As someone who makes pumpkin pie filling alone in a pan, just to eat it with a spoon as a custard-type snack, I think it is a wonderful mix up!! |
