Grooming confusion

I'm confused about the OES's undercoat - what it is, what it looks like, whether its groomed out or not. I had taken my OES to a groomer in August and when he came home he felt "light" for lack of a better word. I could run my hands through his fur and it would glide through. But I notice now that he has, again for lack of a better word, a thick fuzz on him under his hair. Is this the undercoat? If so, do some groomers groom it out and if so, is that right to do? I hope this all makes sense.

The groomer probably strips it all out as she grooms. If she uses a rake, it makes it a lot easier and faster for her to get through the coat instead of actually brushing it all out and addressing any problem areas. There's no reason why you can't take it out as long as you aren't showing your dog. It'll make it feel thinner but it'll still be nice and shaggy if you're keeping it long.
