1c sugar 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp allspice 1/2c drained crushed pineapple 2 tbs flour pinch salt 1/4c brown sugar 1 tbs lemon juice Peel and de-seed very large zucchini and cut into chunks. Place in saucepan with boiling water for at least 2 minutes, drain well, combine in bowl with lemon juice and pineapple. Mix dry ingredients and toss with zucchini. Place in 8 or 9 inch unbaked crust. Dot with margarine, add top crust and seal edges. Bake @ 400 deg. for 25 minutes. Sprinkle with sugar. You will swear it's the best apple pie you've ever eaten. |
