I have an amazing Cauliflower recipe. Blanche Cauliflower for 3 minutes. Place cauliflower in a buttered casserole dish. Cook four slices of bacon. Set aside. Sauce: Whisk together in a saucepan over medium heat until thick 1/4 cup butter 1/4 cup of flour 1 1/2 cups of milk 2 chopped garlic cloves 1 cup Parmesan Cheese Then add your bacon (break it up) Then pour the mixture over the Cauliflower. Sprinkle 1/2 tsp red pepper and nutmeg over top. Cook in oven at 350 degrees for 25 minutes. Delicious! |
OK, so I'm a guy BUT I know a good recipe when I eat one! Pasta Primavera (Healthy Style) 1 lb. scallops 2 cups cauliflower 1 can lowfat cream of chicken soup 1 lg. carrot cut into "match stick" slices 1/2 cup fat free milk 1/4 nonfat Parmesan cheese topping 1 clove garlic minced 1/8 tsp. pepper 2 tablespoons lemon juice 3 cups cooked spaghetti Saute the scallops and add lemon juice and pepper and parsley to taste. In a large saucepan combine all ingredients except the spaghetti. Cook uncovered over medium heat until veggies are tender (about 12 to 15 mins.) Stir in cooked spaghetti. Heat thoroughly and enjoy! |
EASIEST Cauliflower recipe EVER. Short of eating it raw, I guess: Cut the cauliflower into florets. Put in a baking pan, with some olive oil. I usually have spray olive oil, and just make sure its covered. You can pour some in the bottom of the pan ans toss the cauliflower until its lightly covered. Salt and pepper to taste and bake at 350 for about 45minutes to an hour. I usually stir it up, as it lightly browns. It gets a light nutty taste; oh so nice and uncomplicated. My BF is not a veggie eater, and he really likes this dish! |

I'm making this recipe tonight. Got it from cookinglight.com Farfalle with Cauliflower and Turkey Sausage 2 links Italian turkey sausage 3 cups cauliflower florets 2 Tbs olive oil 1/2 tsp salt, divided 5 garlic cloves, sliced 4 cups uncooked farfalle (bowties) 1/2 tsp red pepper 1/2 cup (2 oz) grated pecorino romano 1/4 tsp black pepper Preheat oven to 450. Pierce sausage several times with a knife. Combine sausage, cauliflower, 1 Tbs olive oil in a roasting pan. Toss. Sprinkle evenly with salt. Bake at 450 for 15 minutes. Add garlic to pan, toss. Bake an additional 5 minutes or until sausage is done. Let stand 5 minutes. Cut sausage cross wise into 1/4 inch slices. Cook pasta according to directions. Reserve 2 Tbs cooking water. Combine pasta, reserved 2 Tbs cooking water, 1 Tbs oil, 1/4 tsp salt, red pepper in a bowl and toss. Add cauliflower mixture, sausage and cheese and toss. Sprinkle with black pepper. |

Will get some bowtie next time I'm out then! We don't do pasta a lot here, but I like how light it is. |
