Just made a big batch of macaroni salad today... Grilling veggies like peppers, onions, sugar snap peas in the pod and portobellos with butter wrapped in tinfoil is good with steak. Pasta salads are really versatile though... you can pretty much make it whatever you want.... |
Lots of vegetables and dips going on here. We love to "snack" for dinner in the summer. Often times it's ham rolled with a cream cheese filling, olives, vegetables, fruits crackers etc. I keep these kinds of things ready in the fridge, and then make a nice platter for dinner. We nibble while we watch TV or set on the porch ( that hardly EVER happens). Top it with a glass of wine or iced tea, and you are good to go! |
MMMMM I love the lighter tasty dinners of the summer. (would you believe I have never tried gazpacho ) I'll post some of our favs this afternoon. |
I'm sooooo thankful we're not in Alaska anymore for this 1 reason. I was miserable trying to find things to make w/o bringing up the temperature in the house. We stick to a lot of quick meals in the summer b/c we're always on the go, but they all require time in the oven. Just easy preparation. Our house is always freezing, so I'm usually wanting to turn on the oven or open the door. |
i do a lot of shrimp and scallops...easy scallop recipe mix flour, breadcrumbs, garlic powder, pepper flakes, lemon zest and s and p on a plate. roll scallops in the mixture till dry and lightly saute them in evoo...takes about 3 minutes in the mean time, i saute diced jalapeno, garlic, onion, red bell pepper (jar), zuccinni and drained canned corn...cook till corn has started to carmalize.... easy and quick....and if you have a carb-o-holic, you can serve it with sourdough bread!! |

okay NO cooking involved.... mix blk of cream cheese, one pack of smoked salmon chopped, finely chopped chive, dill, tabasco, garlic powder, s and p....mix all together and refridge for about an hour... spread on flour torts and roll...cut into 1/2'' slices last night i did a yummy chopped salad...finely chop everything excep lettuce all accessories are placed around the lettuce.. hard boiled egg pre cooked chicken breast bacon (okay you have to knuke this) red onion tomato avacado cuke cheddar cheese jalapeno cheese blue cheese crumbles (this went over the lettuce) the salad dressing i mixed italian dressing with some lemon juice to lighten it up..... |
I've been having this yummy salad for lunch. This little coffee house by us serves it. Field greens a Small scoop of chicken salad with grapes in it. a sprinkling of peanuts a sprinkling of dried cranberries and a small scoop of mandarin oranges. with a ginger lime dressing. Some yummy salads there! Darcy, I'm not a rollup fan Maybe I've had ones that sat for too long or maybe the fillings have been boring, or maybe? Cold tortillas are a turn off. DH smears PB on them for sandwixhes......gag. Maybe I'll put the lox shmear on toasted Ezkiel bread.....which is better for me anyway. Or maybe it's time to make some lox ......that sounds yummy....note to me: check the caper and red onion supply. I need to update my salad accessories....but I need the protein at the meal as well. Any summery crock pot recipes? The two terms: summer and crock pot almost seem an oxymoron. |
I'm making this tonight. It does require turning on the stove or getting out the George Foreman (I'm George-ing it): Lemon-Basil Chicken (because I have a ton of fresh basil) 4 boneless skinless chicken breasts 3 tablespoons of fresh chopped basil juice of 2 lemons (about 1/3 cup) tablespoon of oil (I use canola, you can use olive) 4 cloves garlic, finely chopped Pound chicken until it's thin (think cutlets). Combine remaining ingredients to make a marinade. Pour over chicken and refrigerate 1-2 hours. Cook chikcen on stove or George Foreman til done (probably 3-4 minutes each side if you've pounded the chicken. If you've left the chicken un-pounded, 5-6 minutes each side). |

Cous Cous! The food so good they named it twice! A nice simple recipe is a mint cous cous salad. All you have to do is dice some sweet peppers and slice some cherry tomatoes and some spring onions. Prepare the cous-cous, I recommend mixing a big splash of nice olive oil over the dry cous-cous (make sure it's all evenly covered) before adding some boiling water. Keep adding a little more water and stir it with a fork. The oil tends to stop it from clumping together anyway. Then add the sliced/diced veg and some freshly chopped mint along with some lemon juice and some more nice oil. Om nom nom, and it only takes about 6 minutes. |
Had to use the oven but made blueberry mango muffins and they seemed so good in my head. Now I can't touch them w/o running to the bathroom and gagging. Kids tell me they're good. |
You are preggers, of course they gagged you. In ten months they will be delicious. Then again, kids have weird taste buds. |
