Scandinavian Vegetable Stew 8-10 sm red potatoes cut into fourths 2 cups baby carrots- cut up 3 TBL margarine 3 green onions sliced 3 TBL flour 2 cups milk 1/2 c frozen peas 3/4 tsp salt 1/2 tsp dried dill 1 boiled egg-chopped (I added some fresh garlic to this) 1. mix potatoes & carrots in pot with water. Cook till tender. drain. wipe out same pan w/paper towel to reuse 2. melt butter in pan, cook onion and garlic abt 2 mins stirring occasionally. stir in flour. gradually add milk stirring constantly till thickens & boils. stir in potatoes, carrot, peas, salt, pepper. cook 5 to 6 mins. till peas tender. stir in dill. cook 2 mins stirring constantly. Top each serving with chopped boiled egg. (could add ham to make non vegetarian) |
