Anyone a knitter? Question about Kitchener weave

I'm a basic knitter. I can do one color, can cable, etc. I have a pattern for a very pretty, lacy scarf. The directions call for knitting one half, putting that on a holding needle, knit the second half, and join the two with a Kitchener weave. I looked up Kitchener weave and I can figure it out. What I can't figure out is WHY knit the scarf in 2 pieces? Would it turn out horrible if I knit it in one piece??

I've seen kitchener used to graft two sides together when you want the pattern to be a mirror image.

Val, I posted this question on ravelry.com and no lie, within 5 minutes had 8 responses. The answer is that the 2 pieces are mirror images of each other and will have no break in the pattern when worn around the neck. Knitting it one long piece will make one end look "upside down." I'm doing it in one piece.
