I've heard several people just say they were okay the first bar, but for some reason ...they grab a second, and by the second... they love it. Not sure why we all had the same feeling about it. 1.5C flour 1/2C powdered sugar 3/4 cup cold butter cubed 4 eggs 1 1/4C sugar 3/4C lemon juice 1t baking powder 3/4C flaked coconut yellow food coloring (optional) Oven 350 Mix flour, powdered sugar and cubed small butter until crumbly. Then press on bottom of 13X9 baking pan that has been lightly sprayed with PAM. I just push down in the pan as if I'm making any crust ...until it looks more like playdough (all sticks together). Bake 15 min. In another bowl, beat eggs, sugar, lemon juice, baking powder together until completely mixed then give a good squirt of food coloring. Pour over crust. Then bake for 10 min. Sprinkle coconuts over. I press very lightly. Then bake another 15 min. Cool completely (like an hour) before carefully cutting. |

Hmmmm....lemon snow bars with coconut. Would be a huge hit here, even more so w/ DH who whenever asked what type cookie I could make him replies, "Lemon Snow Bars!" And this from a guy who adores dark chocolate. |

No, the original lemon snow bars have powdered sugar, not coconut over the top. We need a different name.......... |

better than hairy lemon bars which was all I could come up with You know, you could use pineapple instead of lemon for something entirely different and more Hawaiian....... nay, I love lemon |
I would love those.. anything with coconut and lemon gets my vote. |
