Anyways, I have a decent amount leftover. What should I do with them? They're red potatoes. |

I always add my leftover potatoes to my scrambled eggs (along with frozen precut veggies from the frozen section) for breakfast - so good! |
I wish I had time in the mornings for a breakfast like that! |
Spanish tortilla!! Take an onion or two, thin slice and cook in olive oil/butter (both if possible) Cook until carmelized, so medium heat and patience......can take 30 minutes. Then dice the cooked potato. If you have canned pepper, take one or two peppers and dice it. Take about 6 eggs or so, beat like for scrabled eggs. Pour into a pan that can go into an oven..like case iron. First put the olive oil/butter in bottom. Add the eggs cook a few minutes, add the potato and pepper, season with salt and pepper. Then transfer to a 350 degree oven until puffy and cooked thru. I lived on those things in Spain. |

Spanish tortilla is an omelet, no "Mexican" tortillas involved. This is Old World tortilla. Of course there's no reason you couldn't do a Fusion dish here and take the eggs once cooked (though you usually serve this like a pie wedge)......anyway, put it into a warmed Mexican flour tortilla, add some grated yellow or jack cheese and salsa........yum. In which case I'd exchange the red pepper for green chile in the egg part and have a NM breakfast burrito (oops, forgot the sausage or bacon) |
ive made potato salad out of them...add some hard boiled eggs to it to add texture and volume! |
That's a good idea Darcy. I'm trying to avoid eggs since I know this weekend will be egg overload! |
