I will be making what I do almost every year, and then flourless peanut butter cookies. Nothing special. I thought about making shamrock cookies but I did red velvet cupcakes for Mr. J's co-workers last week as a late Valentine's, so I don't feel like making something else for them yet. * 4.5lb corned beef, rinsed * 1Cwater * 1C apricot preserves * 4T brown sugar * 2T soy sauce 350 oven Coat a large pan w/Pam. Put CB in and add water. Cover tightly w/aluminum foil and bake for 2 hours; drain liquid. Glaze : combine apricot preserves, brown sugar, and soy sauce. Spread the apricot mixture evenly over the cb. Bake uncovered at 350 degrees F - 25 more minutes or until tender. Basting occasionally with pan drippings. Slice against grain. Eat. From recommendations, I decided to put mine in a crockpot instead of baking it all that time. Put it on low w/1C of water and some seasoning for 8hrs. Came out sooooooooooooooo tender. Made glaze. Then put the CB w/juices into oven after spreading the glaze on top. Bake for 30 min. |
We made a shamrock cake last weekend and decorated it with green icing. Since it falls on Wednesday this year and we've got practice for the Easter drama, I won't be able to go all out like I normally do. But, I'll put the corned beef, carrots, and potatoes in the crock pot so we'll at least have the traditional meal. |
according to brian...his ''peoples'' food doesnt include boiled meat....just potatoes, lots of potatoes....BOOORRING! |
