Pic taken prior to putting in the oven. 1/3C grated Parmesan (I'm sure I used 1/2C) 1/4t Italian seasoning or Mrs. Dash dash salt & pepper 3 chicken breasts (pounded thin) 1/4C green onions 2 cloves crushed garlic 1T butter or oil 1.5T flour 1/2C skim milk 2/3C lite sour cream 1/2 (10oz) pkg frozen chopped spinach, thawed and drained REAL WELL (squeeze the hell out of it) Note: can saute some mushrooms and chopped red peppers in the spinach mix. yum Oven 350 Pound chicken until 1/4-1/2". Roll chicken in the Parmesan and seasoning. I'm generous about it, and I mix some breadcrumbs into the parmessan, fwiw. KEEP the leftover Parmesan. Heat skillet to med-high. with oil or butter. Brown chicken on each side (I do about 4 min. on each side). I usually sprinkle a touch of salt and pepper on them and always some mrs. dash. Pat with paper towels then place in 9X13 dish with some pam. Then remove most of the grease in pan and use to saute the green onions, garlic for 1-2 min. Stir in flour, then add sour cream and milk. Stir until bubbly and smooth then add in drained spinach. I used more than than the "1/2 a package" recommended. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Bake for 20-25 min. |

That does look good! I hate frozen spinach and always use fresh, the frozen is too stemmy . |
