Is there something else I can do with that amount? If I had more I'd think lasagna or something, but I think the amount would just not make that work... |

Freeze it for sometime when you want a quick sandwich? Otherwise I would use it for lunches as sloppy joes the next day or so. If I was making something else w/ it, spaghetti (or some similar pasta dish) would be my vote. |
I always use l/o sloppy joes for taco salad. I mix the meat w. a can of black beans, add taco seasonings, a little salsa, and put it over tortilla chips. Add tomoato, letuce and any thing else you like ( tons of sour cream, cheese and black olives at our house) and you have a nice meal that doesn't seem like "left overs" . Although-- may not like that combo since you don't like cassaroles ?? |
Lori, you don't find that adding taco seasoning on top of the already sloppy joe flavor isn't too strong? I'd be afraid it'd taste like eating salt. |

I don't use a whole package-- or sometimes I just use additional cumin - to smoke it up a bit. I don't use a package flavoring for the sloppy joes--- use my own combination of tomato sauce, spices, green pepper, onion, ect... so there isn't a real salty flavor to them at all. Also-- adding the beans really helps. They are bland and need salt anyway, so, the taco spices seem to mix well with them... As you are heating it , just add the taco seasoining to taste... I don't know...Maybe we just like salt |

I ended up making a marinara meat sauce to put over ravioli. It was good, not great. |
Next time sprinkle a little shredded cheese over it and make a nice egg white omelet with it. We use ground turkey around here for almost all of our ground "meat" meals and the leftovers really do make a great omelet. You may be pleasantly surprised |
