3 parts to this... 1st part can of drained and rinsed black beans handful of cherry tomatoes cut in half handful of fresh cilantro chopped 1/4 of an onion finely chopped 2 cloves of garlic finely chopped 1 lime dash of olive oil s and p to taste mix all ingredient together and keep cool 2nd part mix mayo and some chipolte in adobo sauce together to taste... 3rd part 8 cooked and cooled shrimp (take tails off) 6 eggs 1 cup cheddar cheese 3 scallions chopped (reserve some of the greens) milk or cream s and p to taste mix all ingredients except shrimp...pour into a heated cast iron skillet...once the eggs start to set, add the shrimp standing up, if you can (makes it easier when cutting)... put the skillet in an 350 degree oven for about 15-20 minutes (till it sets up) Plating.. in the center of the plate, pour some spicy green salsa, spread it out like pizza sauce. Cut the fritatta into 6 wedges. Put 3 wedges on a plate, points facing each other. In the open 3 areas, add some of the black bean pico de gallo. Top each egg wedge with some of the chipolte mayo...sprinkle reserved scallions over the whole plate.... |

Sounds wonderful--this is one that I will try--I got a new fritatta pan for Christmas--sounds like a good one to try it out! |
