Veggie Burger Recipe

Okay I made this a day before I made the other recipe I just posted. My husband said to never make a burger without meat again for him ....ever. :lol: So he hated this recipe (for those carefully reading, it wasn't an exaggerated word used to describe his dislike ;) ...). He has never taken a bite of something I've made and just couldn't stop talking about his dislike. He emphasized on wanting MEAT which is why I made the Jessica Seinfield one the next night.

However, I thought it was DELICIOUS!!! He has never tasted a vegetarian burger, so had no idea what to expect. I always get vegetarian stuff when we go out though. Cheaper to make too than buying a vegetarian.

You can freeze these and grill like that, fwiw.

I hated this pic but I still wanted to post the recipe.

1 can black beans, drained & rinsed
1/2 green bell pepper, chopped small
1/2 onion, chopped
3 cloves garlic, peeled
2 eggs
1T chili powder
1T cumin
1t hot sauce
1/2C bread crumbs

Notes: You can add corn to the burgers for more texture and flavor.

If grilling, heat grill on high, ,and oil sheet of aluminum foil.
If you bake, oven 375, and pam a piece of foil.


It's very important that you rinse the black beans and dry them off before mashing them. Goal is removing all excess water. So after you've done this, mash black beans in a bowl with a fork until thick and pasty.

In a food processor, finely chop bell pepper, onion, and garlic. Remove excess water. Then mix in the beans. Throw in eggs,chili powder, cumin and hot sauce (adding this does not make it spicy). Mix in breadcrumbs until it sticks together. I think I may have added almost double the amount to hold it together.

Form 4 patties.

If grilling, place patties on foil &grill 8 min. on each side.
If baking, place patties on that foiled sheet with PAM & bake about 10 min. on each side.

Notes: The second time I made it, I used ritz crackers instead of breadcrumbs and really liked it. I also only roughly puree the veggies. I don't go crazy until it's smooth.

That looks good. Did he not like the texture or the flavor? I think it's hard for die-hard meat people to get used to these 'replacement' foods when they expect them to be the same as what they're used to.

barney, the flavor. He wanted a burger. Period, he said. He only tolerated the other one because he had "this" the night before. I couldn't stop eating the other recipe. I made it on night 3 for myself b/c I liked it so much.
Next time incorporate some meat into his pattie. You could make it a stronger meat, like lamb, elk or whatever you can find. You only need an ounce or two to give the flavor. Then again you could be a real snot and use fish or shrimp and say, "You wanted meat. "
