Make and Freeze

We are running into a major dinner dilemma. Upon getting home from work with Evan, I have absolutely no time or desire to make ANYTHING for dinner. Since Evan seems to go to sleep at 6:30, I want and need to
feed and play with him for about an hour and a half before he passes out.

What can we prepare on the weekend, freeze and defrost for me to throw in the oven during the week. I don't even want to stand by the stove and stir. can you help us???

I always make enchiladas a day ahead or even chicken parmesan on the weekend. Then on monday, take out of fridge, put enchilada sauce on top and bake ...or if it's the chicken ...add cheese and marinara sauce then bake.

I freeze all my muffiins, scones, etc so that in the morning... we just put in microwave for 30 sec and eat.

Does he like Oriental dishes? This past week I've been using my bamboo steamer a lot. Plus I precook items and put them in the freezer....like chicken that is boned and cut into serving portions. I like the steamer because it's less messy than wok cooking. Last night I had a meal on the table in 10-15 minutes.
Thanks! I've been looking at LOTS of your posted recipes on the forum this morning (bored at work).

Can I put some of these dishes together, cook, and then freeze them or must they be cooked, put in fridge and eaten that week? Or should I put them together and not cook then put in freezer? Can you tell, I'm a food moron. I worry about things going bad in the fridge by Thurs and Fri.

It depends on the recipe. I'm still experimenting too!! :) MOST of the time, I make, do NOT bake, and freeze. Put in fridge to completely thaw ....then bake. Spaghetti Sauces freeze well but.. when you've got stuff in a jar, most don't want to make their own which I understand.
Your jambalaya recipe looks delicious! I am going to try that later this week. I'm always a big fan of the crock pot! :lol:

In going thru that 100 list, I did a lot of head slapping, "Why didn't I think of that." For example, the biscuits......sure, freeze the unbaked and bake what you need. No making a full recipe and eating too many just because they are there.
