Add ginger, garlic and cook until fragrant about a minute. Add pork and stir fry for about 5 minutes or until cooked completely.Add mushroom and red onion and stir fry until softened, about 2 minutes. Add soy sauce , hoisin and sweet chili sauce and fry another minute. Add peppers and celery and cook until tender. Spoon into lettuce and top with cilantro and green onions. You can use extra sweet chili sauce as a dipping sauce if need be. I love lettuce wraps and often use iceberg lettuce to hold a variety of ingredients such as curried chicken salad or any other salad for that matter . Great to take for a work lunch and just assemble . Like almost everything I cook I use what I have and substitute accordingly. This recipe is very forgiving and you can throw in any veggies you like or use shredded chicken etc It's always delicious so have fun adapting . |
