I ate 6 last night and lil J loves them (w/o any frosting). Neither the cake or frosting are too sweet. 2C flour 3t baking powder 2t baking soda 1/4t salt 3t cinnamon 1/2t cloves 1/2t nutmeg 1t pumpkin spice add nuts if desired 2C sugar 3/4C oil 1/2C unsweetened applesauce 1heaping t vanilla 2C canned pumpkin (1can of libby's) 4 eggs 350 degrees. Grease & flour a 9 X 13 pan. SIFT flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, pumpkin spice. Then add sugar, oil, applesauce, vanilla, pumpkin. Beat one a time, the eggs. Add optional nuts. Dump in pan. Bake 35 min or until a toothpick comes out clean. Needs to cool. If using cupcakes, I think it made ~30 ...20 min. When cool, make the fabulous frosting Using mixer, mix together room temp [a must] pkg of cream cheese, room temp 1/4C butter (half a stick), and 1C sifted powdered sugar, 1.5t vanilla. Can also add cinnamon if you want. Put unused frosting in fridge [if that wasn't obvious]. |

Let's just say since we ate a cupcake, it's all he talks about. He said he wants cupcakes for his bday, but because his dad yelled at him last night... he told mr. j he isn't invited to his party. He hangs out with WAY too many girls at his school as we imagine that had to be where he got his from.
This bday will be his first cake w/real frosting and everything. We figure the poor boy deserves it. It'll be a carrot cake since Sportacus only eats healthy things (of course it's not really healthy but lil j believes carrots will give him energy since that's what sportacus said, so that's what he wants). |
ha ha ha. That's funny. Well, I love carrot cake and it HAS to be healthier than red velvet cake or something, right?? |
