Simple- Simple Tomato Soup recipe

I kind of threw this together yesterday, and was suprised how good it tasted 8O

We have been so busy--- trying to take care of John's Dad, working outside for fall, working at our jobs ( LOL) that time spent in the kitchen has been slim to none lately. Yesterday, when we were getting ready to leave for the nursing home, John asked what we were having for dinner later. Uh-- Chinese again maybe? He kind of rolled his eyes, which broke my heart... Poor guy can't even get a meal cooked for him. LOL

So-- I hurried and threw together this soup for the crock pot. Old Mother Hubbard's kitchen was BARE-- so it really is a mish mash of junk, that just happens to taste pretty good! We had toasted cheese sandwiches with it. Not as wonderful as Jo's cookin-- but not bad in a pinch...

I have since gone grocery shopping and have a nice pot roast with all the fixings in the oven for dinner tonight.


Here is the soup "recipe"

2 cans low sodium Tomato soup
2 cans beef broth-- ( I used the Campbells soup Condensed beef broth)
2 cans water
2 Cups whole grain bow tie pasta
1 c. carrots --- ( i used the Braun hand mixer to grate them fine)
1 c. finely diced celery
1 red onion diced fine
1 tsp garlic juice
1 Tbsp. Chipolte Powder
1Tbsp. Cinnamon
1 Tbsp. Sugar
1 large "plunk" of Chiplote Mustard

I cooked this on high for about an hour-- then turned to low when we were leaving the house-- cooking another 3-4 hours. Really-- just until everything is tender. When I served it-- I put another "plunk" of sour cream on top. John and I both thought it would be better if the carrots were sliced vs. grated-- and maybe black beans vs the pasta...

But, not bad and sooo quick and easy! I am not the next Rachael Ray-- so don't expect a "WOW" moment. Just filling and "kind" of homemade... :)

YUM that sounds so good! Way to make use of what was in your kitchen already - more like Chopp'd then RR, haha!
In the pinch since #3 came along is all I want!!! Mr. J loves tomato soup! I am not a soup person [i refrained from using an "h" word], but I am always looking for new recipes for him!!!

I was going to say, ...all you need now is some grilled cheese sammies!!! Classy folk like you like to jazz up the name and call it "toasted cheese sandwiches" ;) ;)
Speaking of pot roast... just curious... what is your (to anyone who feels like answering) favorite cut of beef to use for a roast?

That's funny Jo. I don't even know why I wrote toasted cheese. In this house-- we grill 'em. LOL
