This won 1st price in a cooking contest in AK. My favorite chili recipe ever .......okay, at least when it comes to beef b/c we're huge fans of the chicken taco chili recipe I posted awhile back. I was watching Paula last night and she did something I'll definitely have to try next time!! She took 2C bisquick mix with some milk and flipped a jumbo size muffin pan upside down. Used the humps of the muffins as a mold to form bowls for the dough (which she divided in 6 ...number of muffin slots). Oh, she rolled them out into 6" circles first (lots of jokes about the size of certain parts of men here while she did it too ). Baked and they came off easily forming the perfect serving size bowls to put the chili in!! The reduced picture size makes mine look blurry. grr.. and I was too lazy to take a pic of this in a bowl with tortilla chips. * 1lb ground beef (or 1/2lb ground chuck & 1/2lb ground turkey) * 1/2 onion, chopped * 1 t pepper * 1/4 t garlic salt * 14oz tomato sauce * 10 oz diced tomatoes w/chile (rotel) * 1/2 jar (8 oz) must be chunky salsa (really have no idea amount, I just eyeball it which I'd guess is 1C- 1.5C ...after an hour of cooking, I add more or less after tasting it) * 2 T chili seasoning mix * 1 can of mushrooms (drained well) * 3/4 can of drained corn * 1/2 can light kidney beans * 1/2 can chili beans (my preference or flat out pinto beans) * few dashes of garlic, oregano, paprika, ,basil, and sugar. Notes: I add green and/or red peppers to my beef while browning, and add green onions as a finishing touch before serving. Brown meat and the onion. Drain grease, if desired. Add rest of ingred and simmer for an 1.5 on stove or throw in crockpot for 2.5-4 hrs. We spend the entire weekend eating chili. Who doesn't like chili over hot dogs then chili with chips n cheese! |
