Crock Pot Beef Stroganoff Recipe

Had this for lunch-- pretty good!!!

2 lbs boneless chuck steak- cut into 1" cubes
1/4 cp flour
10 ounces sliced mushrooms
1 envelope beef and onion soup mix
1/2 tsp thyme
1 can diced tomatoes ( i used fresh this time-- still have tons left in the garden)
1 8 ounce container sour cream

Toss beef with flour in slow cooker. Add remaining ingredients EXCEPT sour cream. Cook on low for 4-6 hours, until meat is tender.

Stir in sour cream-- serve over noodles if desired.

I think I just had this today at a potluck!!

I only have 2 settings on my crock pot - low and high.

Will it ruin this if it goes a couple more hours on low because I am at work?

As you can see I do not do a whole lot of crock pot cooking. :oops:
I've been thinking about crock pot beef strog for a couple of weeks now. This is by far easier that what I was coming up with. Will put this on the to-do list. Afterall, sour cream ranks just behind bacon as something that is mega sinfully delicious.

Should be fine. Add a bit of water or even some beef broth if you like-- maybe 1/2 cp.

Thanks. I was thinking the water but did not know how much. I will probably do the beef broth.
i REALLY need to get a crock pot or slow cooker. This sounds divine.
Yum!! This is something that always fills me up. My problem is I can never stop eating when it's anything served with noodles!! The one I make uses 4oz cream cheese in place of the sour cream and a beef bouillon cube w/T of Worcestershire sauce.
Lori, do you drain the canned tomatoes? Cuz I don't have any garden fresh ones.

Sorry-- yes, drain the tomatoes. :)
We had this for dinner tonight & it was delicious! We couldn't decide if we were to drain the tomatoes & mushrooms or not so we didn't & it was very good. And I am not much of a red meat eater, but I did like this.

Glad you enjoyed it. We had it last night again, and I used canned vs. fresh tomatoes. I drained mine, but did add a bit of beef broth. One thing about crock pot meals-- they are pretty forgiving with changes or additions / deletations :)
