So lil J is going to a new PPCD program next week, so we had to make something for the teachers and bus drivers. This is NOT a task I'd recommend for someone his age b/c it's more on the experienced level not beginner, so we didn't finish w/o having chocolate ALLLLLLLL over the place. (the raised bump in the middle of his forehead is from slamming into a vase in the living room) I'll try to make these again over the holidays so I can post pics of all the possibilities. I always divide these to make different flavors b/c they make ~50 or so. These are soooooo good rolled in nuts, coconuts, cocoa powder, confectioners sugar, chopped in food processor nuts, and mixing different liquor extracts in. I've tried 2T coffee liquor, 2T brandy, 1T peanut butter, 1.5t almond extract. 8oz cream cheese room temp 2C powdered sugar sifted 2C semisweet chocolate chips, melted in microwave (60 sec, stir, then 10 more secs) 1.5t vanilla In mixer, beat cream cheese, and slowly add in confectioners' sugar then the melted chocolate and vanilla. Refrigerate for about 1 hour. Shape into 1" balls using smallest cookie scooper then your hands and put in freezer for 30 min. (if you have more time, put in fridge for longer). Be sure you put wax paper down before putting them on your cookie sheet. Doing a small batch (like 12 or so) at a time for better handling, roll with whatever topping. For this batch, i needed easiest method ...so we melted 2C chocolate w/1t shortening (so chocolate doesn't get that dull color and keeps silky). Then topped with candy sprinkles. Note: Just wanted to make sure it was clear that if you add a different extract/liquor, you do NOT add the vanilla |
