Terrible pic but they taste yummy. I personally wouldn't cut this recipe in half since it freezes well. Just make however many burritos you need, and put the rest of the meat mixture in a container in the freezer. Thaw and just make burritos again some other time 1lb lean ground beef 3/4C chopped onion (optional, I just used green onions) 7oz container chiles 3/4C corn 2C taco sauce (i didn't have taco sauce and thought it would be excessive. each time i do this, i only use 1/2C ENCHILADA SAUCE) 2t chili powder 1t garlic salt 1t ground cumin 16oz refried beans 8 flour tortillas fiesta/mexican cheese 2T butter, melted oven 350 brown beef and drain grease. Add onions, chile, corn, enchilada sauce, & seasonings. Cook until heated through then take off heat. Microwave flour tortillas for a minute (covered w/paper towels). ...or until they can easily fold. Put a very thin layer of refried beans down center of tortilla. Spoon the beef mixture down the center, sprinkle a little or a lot of cheese on top then fold like a burrito putting it seam down in your 9X13 casserole dish. Brush with melted butter or pam. Bake 30-35 min. I baked mine until they felt a little hard on top (so they'd be crispy not soggy but that's personal preference, so my cooking time was 40 min).
