* 2C diced chicken breast meat (i just use tyson or oscar mayer's pre-cooked seasoned chicken and just mix in the additional seasonings below) * 1/2t ground cumin * 1/2t ground chile powder * 2T chopped fresh cilantro * 1/2C chopped onion (optional) * 15oz can black beans, rinsed&drained * 1/2 can drained corn * 1 can diced green chile peppers, drained * 1 can red enchilada sauce * 8 corn tortillas (I used 12 to cover 9X13 pan) * 2C shredded fiesta blend cheese * 1 container lite sour cream (I think i used half) oven 375 if you didn't use pre-cooked, fry chicken with seasonings then put in big bowl. throw in cumin and chile powder, cilantro, black beans, corn, onions, green chile peppers. Spread 1/4 enchilada sauce over the bottom of baking dish. Place 4 (or in my case 6) tortillas over the sauce, overlapping if necessary. Spread out layer of sour cream. Spoon half of the chicken mixture over the tortillas, sprinkle w/cheese. Then sprinkle another 1/4th of enchilada sauce over the cheese. Add another 4-6 tortillas on top. Then sour cream layer, followed by remaining chicken. Finally sprinkle rest of sauce. Cover with foil and bake for 25 min. Uncover, add cheese and bake until melted (10 min). Note: With corn tortillas and baking, I always put on cookie sheet PRIOR to using, spray with a little pam, and bake for 5 min at 425 so they don't get soggy and taste better when eating leftovers the next day. Not necessary though, just my preference We added chopped avocados and salsa on top before we ate it. |
