* 1 pkg manicotti shells * 4C shredded mozzarella cheese, divided * 2C (1 plastic container) ricotta * 1C grated Parmesan cheese, divided (i only use 1/2C) * 1 heaping T minced garlic * 1 egg * 2T dried basil (don't skimp here!) * 1 extra large jar of spaghetti sauce (you may need 2 if you use a normal size jar... not sure) Bring large pot of water to a boil. Take OFF stove. Add pkg of manicotti and let sit for 15 min. Then carefully remove each one to dry. Note: They should NOT be completely cooked as it's easier to stuff when it's not but will finish baking while cooking!! Set oven 350. Put pam in 9X13, and spread 2C sauce on bottom. While waiting for manicotti to sit, in a bowl mix 3C mozz., ricotta, 1/2C parmesan cheese, garlic, egg&basil. Stuff all the filling in a gallon size ziplock bag. Cut the very tip and carefully stuff manicotti. Put stuffed manicotti in pan, cover each with a little more spaghetti sauce. I'm guessing I used around 2 more C. Then sprinkle each with mozz cheese. Bake 15 min. Then you can choose to add the last 1/2C of parmesan. Bake another 10-15 min. I baked until sauce seemed to be absorbed a little and mozz was melted nicely, so for me about 17min. |
