If I wanted to pre-chop things like onions, garlic, etc. (not more delicate veggies)...how long will those last cut up like that? |

It really depends for me. If it's the pre-packaged, pre-cut bags of veggies ...they last me 1-2 weeks. If I chop them, seal making sure all the air is out ...then on average 5 days. My green and red peppers and onions always last me a longer time though. |
Yeah, I've found the pre-packaged ones last longer than if I do it myself. Don't know if they do something to them, or just seal them better than I do. |
You've got plenty to keep you busy. Buy frozen if you like them (personally I don't) as they are processed very soon after harvest and reatain plenty of nutrients.
Onions can be chopped in mass and frozen in little servings (or bang the bag like one does with hash browns to take out single servings). Peppers are pretty easy to chop so I do those fresh. Garlic I'm now buying in the jars ( I'm surprised too). Maybe I've just developed speedy ways to chop veggies over the years and don't notice the time.....probably less than 5 minutes for most. A good sharp knife is a blessing for speed. |

Yeah, I have a chopper and whenever I use it, I'm like, that was great! But for some reason I'm opposed to it...like it's cheating or something! Maybe because I used to be an awesome chopper.
Susan--yeah, the chopping doesn't take me that long either...I guess it just seems longer when you have a toddler hanging on to your legs saying Up Up!... I just have such a short time in the PM with her that I don't want to waste any of it on cooking, but at the same time, I want to make a nice, healthy dinner for all of us! Dilemmas! |
I realize time is at premium, how about prechopping during "free moment"....even night before. yes, some nutrient loss, but gain time. |
