Pic is very blurry but I only took 1, so this is all I've got. * 3/4C oj * 1/4C oj * 1/2C white wine * 1/2C syrup (preferably not maple) * 2t chopped fresh rosemary (mr. j isn't a big fan so I never use) * salt * pepper * 4 chicken breasts * 2T butter * 2T oil mix together the rosemary, salt&pepper. Rub mixture on both sides of chicken. melt your butter/oil in skillet & cook chicken over medium-high heat for 4-5 min on each side depending on thickness (i always cut mine out to 1/2" thickness). Note: I just cook my chicken with mrs. dash on both sides & sometimes a touch of salt. Bring 3/4C oj & wine to a boil in a small saucepan. Boil for 5 min, then stir in syrup. Pour cornstarch in 1/4C oj, mix until dissolved then add to saucepan. Lightly boil for another 5 min or until thickened. Add chicken to sauce until chicken is heated and serve. Tastes SO good if you can grill the chicken, cut up, and serve over rice. |
