* 1.5lb flounder fillets * 1C crabmeat (drained, flaked & cartilage removed) - canned works too and may find you need 2cans (I like filling more than fish!! ) * 1T finely chopped green pepper * 1/2t dry mustard * 1/2t Worcestershire * 1/4t salt * few dashes of garlic * ground white pepper, to taste * 3 crushed saltine or ritz crackers (i used more like 6-7) * 1 egg white * 1T mayo * 1/4C butter, melted * 1 egg yolk * 5T mayo * 1/2t paprika * 1t parsley 1 Oven 400. Rinse fillets, pat dry w/paper towels and sprinkle w/salt. 2. Mix crab meat, green pepper, mustard powder, old bay, garlic, Worcestershire sauce, salt, white pepper and crackers. Combine the egg white & T of mayo then put in mixture. 3. Brush fillets w/melted butter. Place in a lightly greased, shallow baking dish. Spoon the crab mixture over the fillets and drizzle with any remaining butter. notes: I just put the mixture in the middle and wrapped fillet cut in strips around as if it were bacon. 4. Bake fillets: 400 for 15min. . 5. While the fish is baking, lightly beat the egg yolk in bowl. Stir in 5T mayo. Remove fish from oven and spread this mixture over the stuffing. Then sprinkle w/paprika & parsley. 6. Increase temp. to 450 & bake until golden and bubbly ~6 min. |
