My mother always did that. Not sure how it affects the quality if you want to use them fr pesto or something.
She laid them out in a shallow pan and froze them, or in a bag with waxed paper between the single layers of leaves. |
If you're growing tomatos, you can make salsa, spaghetti sauce, etc... |
you can also dry them as ice cubes. Put them in a cube tray, fill with water and then freeze, pop out and store in bag ready for use. They oxidize when frozen without protection. Look ugly, taste ok.
You can mix with wine vinegar and store in refrig. Pesto, pesto, pesto which freezes wonderfully. When making a tossed green salad with EVOO and wine vinegar, use basil as the herb seasoning. Yum. |

Paula, I have several basil plants growing. I love them! I used them in everything. Each week I make a batch of veggie soup to have with lunch, and nothing is better than fresh basil. I also use them in salads, sandwiches, sauces. And will use them with tomatoes and mozz cheese too! I love summer fruits, veggies and herbs! |
I have two plants also. Nothing like fresh basil in homemade spaghetti sauce and also my favorite is tomatoes, fresh mazzarella and fresh basil with a little olive oil. I also made chicken breasts over the weekend and put a slit in the chicken and stuffed some basil leaves in the slit, it was very good. |
