1 cup fresh or just the whole bunch flatleaf parsley 3/4 cup EVOO (extra virgin olive oil) 3 tablespoons red wine vinegar (cider works too) 1 tablespoon lemon juice, hopefully fresh 1 Tablespoon minced garlic (jarred is fine) Darcy and I will use 2 or 3 Tbs 1 or 2 minced shallots (or 1/4 cup red onion minced) 1/2 teaspoon red pepper flakes (for some ooomph) 1/2 tespoon salt, 1/4 t. pepper (more if necessary for your taste) Optional additions: select only one! 2 tablespoons dried oregano 2 teaspoon cumin 1 tablespoon dried basil 2 teaspoons cilantro Whiz together and let sit for an hour or so to blend flavor. hmmm, I like parsley, especially in summer. |
