Lee is BBQing ribs and I was thinking about making some shish kabobs. So, any great recipes out there????? I gotta impress with the cooking because otherwise all I will hear about is my lack of walls and electricity etc. Okay so who am I fooling, I'm still going to hear about it. Might as well use it as a conversation piece if the conversation starts lagging. |

this has always been a tough one for me. I know its hard to keep it on the rods.
What kind of meat or fish? I think chicken is the best. use large veggies pcs, cut. mushrooms, peppers, onions, and tomatoes. also fruit as pinapple!! great on the grill! use a nice sauce on the chicken. marinade big trick to get all cooked at the sme time. I finally bought kabob baskets. they are 4 sided, open them, put your kabob ingrid. then close lock and grill. can grill on all 4 sides. just love them! like a small mimi long basket. |
I like the simple ones - beef cubes, peppers, onions. I served them with BBQ and horseradish sauce.
Another fun one was the fruit ones my friend Mary served at her daughter's graduation party. They were assorted fruits - melons (watermelon, cantaloupe, honeydew), strawberries, grapes, pineapple. The labor part was cutting the fruit in chunks 1st. It was fun putting them on skewers, and they were very pretty. I use the bamboo skewers for both. Soaking the ones getting grilled 1st is a good idea too. |
Yum! I like pork, lamb, chicken, beef, shrimp, even sausage as the meat. Sausage does nicely with a BBQ type sauce or beer based, the other meats most often end up in an EVOO/Lemon juice/garlic/oregano marinade. I too like the peppers and onions......especially the grilled onion.....but ditto the other veggies mentioned, tomato, mushroom, zucchini (sliced extra thick). I suggest you grill the meat and veggies separate until you learn how long each takes. (sometimes veggies take longer than the meat )
Cool idea with the fruits.....maybe a nice honey/lemon or lime/ginger glaze right at the end? |
I like to marinate the chicken in terriyaki sauce and then skewer them and grill them. I like to grill the veggies separately, but those can also be marinated in some terriyaki. If you want you can do some zucchini, onion, pineapple, red pepper...
I also like to marinate in a vinaigrette... |
put all of your veggie on seperate sticks....meat on another...they cook at different times.....
the light version is with chicken...marinate overnight.. 2 lemons, squeezed with rinds throw in, glug of olive oil, fresh garlic, salt and pepper... cut into chunks, place on soaked sticks and grill...i usually only put a little evoo on the veggies... serve with saffron rice and a salad... |

I made a simple chicken sautee with veggies, cucumber/feta/yogurt sauce for dinner. DH's comment, "You forgot the garlic" He was right. Yeah gads.......... |
