So, here I sit with 1 pound of ground beef. I need some recipe ideas. I don't want to make hamburgers or spagetti either. And it has to be healthy (weight) friendly. Any ideas? |

Meatballs with baked potatoes. Mock beef stroganoff (brown ground beef, add mushrooms, onions, beef stock, sour cream, etc) over rice or noodles. If you don't want hot tacos, how about taco salad? Stuffed peppers or cabbage rolls. |
We use a different recipe for meatballs. They are about 2 W.W. points per meatball and are both tasty and healthy. The neat part is the spinach.
LOW FAT MEATBALLS WITH SAUCE 1 LB. LEAN GROUND TURKEY 2 LG. Portabella Mushrooms Chopped 3 cloves garlic (crushed) 2 egg whites ½ cup Parm. Cheese 1 Tbsp. Italian seasoning 2 Tbsp. Worcester sauce * PUT IN LAST – 1 box frozen chopped spinach (micro defrost and wring moisture out in a towel). Salt and Pepper to taste Mix everything to make meatballs Put some olive Oil in a pan & fry meatballs – divide meat mixture into 8 (BIG) meatballs. Cook meatballs until done. Use 1 jar of your favorite sauce and cook together. I usually make them the morning of the day I’m going to use them for dinner. After frying them and cooling them down I put in the refrigerator and then 2 hours or so before we are going to eat I put them into a crockpot, high for 1st. hour and them low until they are hot and we are ready to eat. (2 points each) |

I do this dish a lot... --- Patty up the burgers- - and place in a baking dish. Pour a can golden mushroom soup mixed with low fat sour cream over the top. Bake at 350 1 hour. I add additional fresh mushrooms and serve with No yolk noodles and a green vegetable. or-- how about a "pizza"? I have been using the low carb tortillas for the crust. Add sauce, vegatables, browned ground beef and cheese. |

Be grateful my DH isn't in charge. It would be browned GB with ketsup over elbow roni. It's the first thing my mother taught all her children in the kitchen and I made the mistake of cooking it for him. Now he requests it |

My kids used to request "Campfire Stew" like grandma made (ex-MIL), so I asked for the recipe. It was ground beef with a can of Campbell's vegetarian veg. soup dumped it. They thought it was heaven! |
Here's the infamous Tater Tot Casserole Could be made with low-fat soup, but unfortunately I've never found low(er) fat Tater Tots.
In a casserole, layer: browned ground beef, salted and peppered thinly sliced onions frozen mixed veggies (not bad, points wise so far) can of cream of mushroom soup undiluted Tater Tots Sprinkle with paprika Cover with tin foil. Bake at 350 for 30 minutes. Remove foil, bake for another 30 minutes or until tots get brown. |

It was GREAT! I made (ground) beef stroganoff! I sauted the beef, took it out, sauted mushrooms and onions, added back the beef, salt, peppered and garliced it and cooked together. I took healthy choice cream of mushroom soup, mixed it with beef broth and stirred it in. At the very end, I added a BIG spoonful of fat free sour cream. Made egg noodles with it, and aspargus. It was YUM-O!!!! |
another easy one is this....
ground beef casserole... 1 lb gb can diced tomatoes 1 onion chopped sauteed 2 celery stalks chopped sauteed 1 can mushrooms (or half carton of fresh) 1 can tomato sauce chedar cheese to taste 1/2 bag elbow noodles saute onion and celery, add gb...brown all together... in a seperate pot, boil your noodles..cook half way once meat is browned add mushrooms, diced tomatoes and tomato sauce. season with salt. pepper and garlic powder... drain noodles and add to pot. mix together...add cheese (i like it cubed) pour into a sprayed pyrex dish and bake for 20 minutes at 350... serve with garlic bread..... |
